How to organize manual testing for a project - where to start?

We are launching a web service, and now we need a stage of manual testing. Autotests don't cover everything, especially in terms of interface and user logic. I'm thinking of involving specialists who offer manual software testing services, but I don't quite understand what is usually included in such an approach.

Automated tests are useful, but they can't always spot bugs that are visible in normal use. Manual testing helps to identify problems in the interface, logic and interaction with the system.
