I tryed it for the first time this weekend out at lotw. I was completly amazed at how good it was. There was absolutly no fishy taste at all. I didn't think I would ever try it, but it's like other things in life, if you get past the looks it actually tastes pretty good!
Its very similar to taking the back straps out of a deer. Cut along the spine and rib cage. Try not to puncture the rib cage or belly area because it can get messy if you do. The tail meat isn't bad either, but try to avoid any meat that looks pink. I boil them in water and brown sugar and then dip in butter.
